不同氮气浓度贮存环境下片烟主要化学成分与感官质量变化的关系

  [摘 要]为研究片烟在不同氮气浓度贮存环境中常规化学成分与感官质量变化的关系,将兴义烟叶储运站烟叶仓库内已经醇化三年的2010年陈烟和处于初始醇化状态的2013年新烟置于同一仓储条件下,分别在不同氮气浓度环境中贮存养护,期间在不同时间点对烟叶常规化学成分和感官质量进行检测和评价,结果表明:(1)总糖、还原糖、总植物碱和PH值均表现为下降趋势,下降幅度表现为自然醇化>充氮85%>充氮90%>充氮95%;(2)总氮、氯和钾变化趋势不明显;(3)初始醇化新烟内在感官质量评吸得分表现为:自然醇化>充氮85%>充氮90%>充氮95%;醇化到位陈烟表现出相反的规律;(4)PH值与内在感官质量的变化存在显著的相关性。因此,氮气贮存能够有效抑制片烟醇化,减缓醇化到位烟叶质量衰减的速度,氮气浓度越高抑制效果越明显,同时,还能通过对PH值的检测,辅助判断烟叶醇化质量。

Therefore, nitrogen storage can effectively inhibit tobacco aging, slow aging in place of tobacco quality decay rate, nitrogen concentration the higher the inhibitory effect is more obvious. At the same time, but also through the detection of the pH value, the auxiliary judgment of tobacco leaf aging quality.

  片烟醇化是通过烟叶原料本身的物理和化学变化,改善烟叶品质,使烟叶青杂气、刺激性逐步减少,香气逐渐显露,香气质和香气量变佳,吃味醇和,余味纯净舒适,最终达到卷烟产品叶组配方设计用料质量要求,目前,行业内烟叶仓贮养护的主要工作大部分主要集中在烟叶原料的防虫、防霉方面,烟叶醇化控制的手段相对薄弱,由此导致两个方面的问题,一是醇化速度慢,醇化质量达不到卷烟生产用料要求而影响烟叶原料的使用;二是已经醇化到位的烟叶因不能在最佳醇化状态及时投入使用,导致烟叶过度醇化,影响烟叶原料的使用价值。
  氮气气调作为一种国际公认的绿色储存技术,目前已被广泛应用于医药、粮食、果蔬及食品领域的保鲜、保质,效果显著,行业内部分单位应用氮气气调贮存烟叶原料,其主要目的是灭虫、防霉变,充氮贮存对烟叶内在质量影响方面的研究还未见报道。正是居于此,本课题通过对相同仓储环境和不同氮气贮存条件下,不同贮存时间点烟叶样品感官質量及主要化学成分的变化规律进行分析,了解烟叶化学成分与感官质量变化的相关性,探索烟叶原料在氮气贮存环境下,氮气浓度与醇化速度、醇化质量的关系,以期利用烟叶原料贮存过程中氮气浓度的变化控制烟叶原料醇化速度,延长醇化到位烟叶原料质量保持的时间,防止烟叶原料过度醇化,控制烟叶霉变和虫害,对烟叶醇化进程实施有效控制。
