恩施主产烟区烤烟香气香型香韵特征

  摘  要:为掌握恩施烤烟香型香韵和品质特征,对恩施主产烟区烤烟样品进行感官质量分析。结果显示,恩施烤烟香型为中间香型,程度“尚显著-较显著”,植烟区域、海拔和品种间烟叶香型一致性高。恩施烟区属“武陵秦巴生态区—醇甜香型”,香韵丰富,15种香韵有14种得到显现;香韵以干草香、正甜香为主,辅以木香,复合清甜香、焦甜香、青香、豆香、坚果香、焦香、辛香、果香、药草香、花香、酒香。香气品质中主要指标香气质、香气量和透发性均处于中等+至较好的水平。植烟区域对香韵差异有显著影响,中海拔烟区香气品质最佳。总的来看,恩施烟区属“武陵秦巴生态区—醇甜香型”,香韵丰富,主要香韵是干草香和正甜香;香气品质中等至较好,香气特征稳定,中海拔烟区更能彰显香型特征和香气品质。

  Abstract: In order to study the aroma and quality characteristics of Enshi flue-cured tobacco, sensory quality of flue-cured tobacco samples in Enshi main tobacco producing areas was analyzed. The results showed that the aroma type of Enshi flue-cured tobacco was intermediate, and the degree was "moderate significant - significant", and the consistency of aroma type of Enshi flue-cured tobacco was high among tobacco growing areas, altitudes and varieties. The Enshi tobacco area belongs to the "Wuling Qinba ecological area-mellow sweet-scent type", with rich fragrance, and 14 of the 15 fragrances are displayed. The fragrances are mainly hay fragrance, positive sweet fragrance, supplemented by woody fragrance, complex sweet fragrance, burnt sweet fragrance, green fragrance, bean fragrance, nut fragrance, spicy fragrance, fruit fragrance, herb fragrance, flower fragrance and wine fragrance. The main aroma quality indicators, aroma quality, aroma quantity and permeability were in the middle + to better level. The aroma quality of tobacco was the best in the middle altitude tobacco planting area. Generally speaking, the Enshi tobacco area belongs to the "Wuling Qinba ecological area-mellow sweet-scent type", rich in aroma, with the main aroma being hay aroma and positive sweet-scent. The aroma quality is medium to good, the aroma characteristics are stable, and the middle altitude tobacco area can better show the aroma characteristics and aroma quality.
  恩施地處湖北省西南部,降水充沛、雨热同期,是传统的优质烟区。上世纪60年代,全国烤烟香型区划认为恩施烤烟风格属中间香型[1-2]。2008年恩施州烟草公司依托中国烟草专卖局重大科技项目“卷烟品牌导向的烟叶生产体系研究—‘清江源’特色优质烟叶生产体系研究”[3],对主产区烤烟香型进行了系统研究,明确了“甜、雅、香”风格特征,甜感突出、富有甜润、无干燥感,香味飘溢、口感细腻、成团性好,香味浓馥、芬芳优美、厚而留长。2014年全国烤烟香型区划进一步明确恩施烟区香气风格特征[4],以干草香、醇甜香为主体香韵,醇甜香突出。近年来,卷烟消费者对卷烟抽吸时烟气所表现出的香型日益关注,工业企业在卷烟开发时也不断提高了烟叶香型风格与卷烟品牌内涵的匹配度,并以此为采购烟叶原料的主要依据。恩施烤烟主要工业调拨用户也反映烤烟香气在年度间、县域间有一定的波动,要求产区持续增加香气风格的特色和稳定性。这些市场趋势变化倒逼烟区在烟叶生产中需要持续关注烟叶风格特征的变化、特点、问题,并在烟叶种植区域选择、栽培技术优化、烘烤工艺调整等方面做出配套反应,使烟叶香气风格彰显和稳定。因此选择恩施主要产区烤烟样品为试验材料,对香型、香韵种类、香气品质进行评价,旨在明确不同主产区烟叶香气风格特征类型及差异,为恩施特色优质烟叶生产技术和卷烟工业采购烟叶原料提供依据。
